Split peas are a great source of plant-based protein and high in fiber while being low in fat, and a good source of folate, iron, and potassium.
Ingredients
Homemade Plant-Based Protein Powder
1 cup green split peas
2 heaping Tbs flax meal
2 heaping Tbs chia seeds
1 Tbs sunflower seeds
Optional additions
Pumpkin seeds
Hemp seeds
Coconut sugar or stevia
Cocoa powder or vanilla powder
Directions
Soak green split pea in water overnight.
The following morning rinse the split pea and drain to remove excess water. Use a clean dish towel or paper towel to dry completely.
Then, preheat the oven to 350ºF and spread the split peas onto a baking sheet in a thin layer.
Bake the green split peas for 35-40 minutes or until golden brown
Remove the peas from the oven and allow them to completely cool.
Add all the ingredients to your high-powered blender or food processor and blend until it becomes a powder, flour-like consistency.
If needed, filter out any non-blended peas and blend again separetely until fully powderized.
Transfer the powder to a jar with an airtight lid.
Store in the refrigerator for 3-4 weeks.
Add 2-3 scoops to your next smoothie or try baking with them and making protein bars!

White Bean Burgers
1 can cannellini beans, drained & rinsed
2 Tablespoons of olive oil
1 cup bread crumbs or oats
1/2 tsp garlic powder
1 tsp paprika
1/2 tsp chili powder
1 tsp of cumin
1 tsp dried oregano
2 Tbs nutritional yeast
Salt and Pepper to taste
Directions
Combine all the ingredients in a food processor and blend until well-combined. The mix should be malleable but not too sticky. You can add a splash of water if the ingredients aren’t binding.
Shape the mix into four equal patties by hand.
Heat a skillet on medium-high heat.
Once hot, add enough oil to lightly coat the pan and cook the burgers about 5-7 minutes on each side, flipping occassionally. Cook until both sides are lightly browned.
After the burgers are cooked, serve on a bun with your favorite toppings and alongside your favorite sides!

Carrot-Banana Bread
1-2 medium carrots, grated (about 3/4 cup)
2 ripe bananas, mashed
1/3 cup non-dairy butter, melted
1 Tbs vanilla extract
2 Tbs nut butter
1/4 cup brown sugar
1 cup non-dairy milk
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
Pinch of salt
Optional add-ins: walnuts or almonds, raisins or dried cranberries
Directions
Prepare a loaf pan by lightly greasing it with butter or canola oil and dust lightly with flour.
Preheat the oven to 350ºF.
In a medium bowl, mash together the melted butter, brown sugar, vanilla, and banana.
Then mix the grated carrot and milk in with the banana mix.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
Create a well in the flour mixture and fold in the wet ingredients.
Fold in the additional add-ins if desired.
Distribute the batter into the loaf pan.
Place in the oven and bake for 50-55 minutes. After about 30 minutes, check the loaf, and if it is not set in the middle, cover the pan with foil so that the outside doesn’t over bake.
Bake until the loaf is done and check by poking a knife or toothpick in center, if it comes out clean, the loaf is done.
Allow the bread to cool before slicing and enjoying.
Store at room temperature for 3-4 days or in the refrigerator for up to 5 days.
