Ingredients
4 (6-8 oz.) Chicken breasts
2 c. packed baby spinach, chopped
1 c. plain, low-fat yogurt
1 c. marinated artichoke hearts, drained & chopped
1 tsp. dijon mustard
1/2 tsp. garlic powder
8 slices mozzarella cheese
Directions
- Preheat oven to 400°F
- In a large bowl, mix together spinach, yogurt, artichokes, garlic powder, and mustard
- Line a 9 x 13 in. baking dish with chicken breasts in a single layer
- Spread spinach mixture over chicken breasts, top with cheese slices
- Bake for 30 minutes or until chicken reaches internal temp. of 165°F
- Remove from oven and let cool for 5 minutes before serving
