Citrus Mint Mocktail

Sit back & relax under the sun with a Citrus Mint Mocktail! This beverage is crisp and refreshing for Spring or Summertime. This recipe is super easy to make and is absolutely delicious without all the process sugars or concentrated ingredients.

Ingredients

Serves: 2

Citrus Mint Mocktail

  • 1 can soda water
  • 1/2 cup orange juice
  • 1 lime
  • 2-3 tsp honey
  • 5-6 fresh mint leaves
  • Ice

Directions

  1. In a small pinch bowl, combine the honey with about 1-2 tsp of hot water, stirring together well with a spoon.
  2. Then, rub 3-4 of the mint leaves between your fingers, opening up their flavor.
  3. Add the mint to the honey and press into the sides of the bowl with the back of a spoon.
  4. Then, add a fe ice cubes to two glasses and equally divide the orange juice between the two.
  5. Cut the lime into quarters and squeeze a quarter of the lime juice into each glass and save a thin slice of lime for serving.
  6. Equally divide the honey/mint mix between the two glasses.
  7. Top each glass off with soda water evenly and then add in 1-2 more mint leaves, first rubbing them around the rim of the glass.
  8. Serve and enjoy!

Watermelon & Mint Agua Fresca

Watermelon & Mint Agua Fresca is simply blended watermelon served up with a pinch of sugar, lime juice, and fresh mint leaves over ice. This delicious beverage is perfect for a hot summer day. And with fresh, sweet watermelon, you don’t even need to add the sugar.

We recommend buying a seedless watermelon and using a mesh strainer. You can use a blender, food processor, or immersion blender to make your watermelon juice

Ingredients

Watermelon & Mint Agua Fresca

  • 1 whole watermelon, seeded & cubed
  • 1-2 limes
  • Ice cubes
  • Mint leaves for serving
  • Optional: Sugar and plain soda water

Directions

  1. Break down your watermelon on a sturdy surface, placing a slightly damp kitchen towel under your cutting board to prevent it from sliding around. Use a serrated knife for an easier cut through the watermelon rind.
  2. Remove any seeds and cube the watermelon, placing the cubes into a large bowl.
  3. Gradually blend the watermelon cubes in batches with your blender or processor. Once blended, transfer the juice through a mesh strainer into a pitcher or other serving container to catch the remaining seeds.
  4. Continue this process until all of your watermelon has been juiced.
  5. For serving, pour 8-10 ounces of watermelon juice into a tall glass.
  6. Cut the lime in quarters and squeeze one or two quarters into the glass.
  7. Add a few ice cubes and 1-2 fresh mint leaves.
  8. Serve and enjoy!

For added sweetness, you can add a teaspoon of granulated sugar to the glass. Or you can top off the juice with soda water for a bubbly drink.
