These make for the perfect gift basket of holiday treats for your loved ones, friends, and neighbors. Plus, this recipe is vegan and gluten-free friendly with a few simple substitutions.

Ingredients

Chocolate Mint Cookies

  • 1/2 cup butter or vegan butter
  • 1/4 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 cup packed brown sugar
  • 2/3 cup unsweetened cocoa powder
  • 1 cup flour (or gluten-free flour)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbs milk (or non-dairy milk)
  • 1/4 cup chocolate chips
  • 1-3 small peppermint candy canes (crushed)

Directions

  1. Begin by preheating the oven to 350ºF
  2. Next, in a large mixing bowl, combine the butter, sugars, non-dairy milk, and vanilla. Whisk together or blend with a hand blender until smooth. Then mix in cocoa powder until combined.
  3. Then, in a separate bowl, whisk together flour, salt, and baking soda. Once whisked, gradually add the flour mix to the wet ingredients.
  4. Fold in the flour with a rubber spatula until well combined.
  5. Afterward, fold in the chocolate chips and half of the crushed peppermint candy.
  6. On a baking sheet, roll out the dough into small balls and place about 2 inches apart. This batch should yield about a dozen small palm-sized cookies.
  7. After the dough has been rolled out, sprinkle the rest of the peppermint candy on the top of the cookies. Place in the oven and bake for 10 minutes for soft and chewy cookies or 12 minutes for more firm cookies.

Ingredients

Kale White Bean Soup

  • 1/2 yellow onion, diced
  • 3 small carrots, diced
  • 2-3 garlic cloves, minced
  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • Black pepper to taste
  • Olive oil
  • Optional seasonings: red cayenne pepper, ground thyme, oregano, and Italian seasoning

Directions

  1. Begin by preparing your vegetables and set aside. Leave the kale for near the end.
  2. In a medium-large soup pot, set heat to medium-high and drizzle a bit of olive oil. Add the carrots, onion, and garlic, and sauté for 5 minutes.
  3. Next, add the beans and vegetable broth. Stir in a dash of black pepper. Add more seasoning toward the end to taste. In this video, we add dashes of cayenne, oregano, Italian seasoning, and ground thyme (it’s very delicious this way). Cook at the same med-high heat for 5-10 minutes.
  4. Reduce heat to low, add the kale, and cover the pot. Let the mix simmer for 20 minutes.
  5. After 20 minutes your soup is ready. Turn off the heat and serve hot as it is or over pasta or with bread. Substitute gluten-free options if desired for a full gluten-free dish.

  • 4 cups vegetable broth
  • 1 cup uncooked red or brown lentils
  • 1 tsp dried oregano
  • 2 tsp Italian seasoning
  • 2 Bay leaves
  • 1/2 tsp Black pepper (more to taste)
  • Olive oil

Vegetable Lentil Soup

Directions

  1. Begin by preparing all of your vegetables and removing peas from the freezer to thaw.
  2. In a large pot, set heat to medium-high and add a light drizzle of olive oil. Add the peas, onions, carrots, celery, and garlic. Sauté and stir continually until the onions are translucent.
  3. Next, add the diced tomatoes, vegetable broth, oregano, Italian seasoning, bay leaves, and black pepper. Then add the lentils.
  4. Bring the water to a boil then quickly reduce to low heat, cover and simmer for 10-15 minutes or until the lentils are cooked and vegetables are soft.
  5. Serve with bread or top with chopped green onions.
