2 cucumbers, peeled & diced
½ red onion, small dice
½ red bell pepper, small dice
Cucumber Salad Dressing:
⅓ c. rice vinegar
2 Tbsp granulated sugar
½ tsp sesame oil
¼ tsp red pepper flakes
1 tsp salt
Optional toppings: Green onion, minced basil, chopped roasted peanuts
Directions
Begin by preparing the dressing ingredients in a measuring cup, stir thoroughly, and set aside.
Next, prepare your vegetables and place in a large bowl.
