Roasted Curry Cauliflower & Grain Bowl
Ingredients
3 c cauliflower, chopped
1 Tbsp olive oil
1 tsp curry powder
½ tsp turmeric powder
½ tsp garlic powder
1 Tbsp apple cider vinegar
1 tsp salt & black pepper
1 c. uncooked quinoa
1 c. chopped kale
½ cucumber, diced
¼ c red onion, diced
2 tsp tahini or other desired dressing
Directions
- Preheat the oven to 350 degrees F. In a large bowl, combine cauliflower, olive oil, curry, turmeric, garlic, salt, and pepper, mix thoroughly. Spread out cauliflower mix on a baking sheet and bake in the oven for ~35 minutes or until cauliflower begins to crispen.
- Prepare quinoa in a rice cooker or on a stovetop pan with 2 c. water.
- Prepare remaining vegetables and set aside.
- Once quinoa and cauliflower are ready, serve your grain bowl with a portion of quinoa, kale, red onion, and cucumber, and cauliflower and top with tahini, or a squeeze of lemon juice and sesame seeds.
