Mediterranean Salad
Ingredients
2 cucumbers, diced
½ c. red cabbage, chopped
¼ c. parsley, chopped
½ red onion, diced
½ c. chickpeas
2 tsp. Olive oil
1 tbsp. Thaini
1 tbsp. Lemon juice
½ tbsp. Balsamic vinegar
1 tsp. Salt
1 tsp. Black pepper
Directions
- Prepare vegetables and place in a medium-large bowl.
- Toss in oil, tahini, lemon juice, balsamic, salt, and pepper. Taste and season further if desired.
- Serve as a main dish or with falafel, pita, hummus, and quinoa.
